1 medium-sized cauliflower, washed and cut into florets
2 medium-sized tomatoes, finely chopped
1 large onion, finely sliced
2 cloves of garlic, minced
1-inch ginger, grated
2 green chilies, finely chopped
1/2 cup peas (optional)
1/2 cup coconut milk
2 tablespoons oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon red chilli powder (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish

Instructions:

1. Prepare the cauliflower: Trim the cauliflower and break it into bite-sized florets. Blanch the cauliflower in hot water for 3-5 minutes until slightly tender. Drain and set aside.

2. Sauté the aromatics: In a large pan, heat oil over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add sliced onions and sauté until golden brown.
