Paneer handi is a quintessential North Indian recipe of paneer, which is typically prepared in a handi, that is, a kadhai or a wok. A handi is a kind of pot generally used for Indian cooking, which is shallow in depth but has a wide bottom. This paneer dish is prepared in a handi and that is where the dish gets its name from. A simple and easy-to-make dish, paneer handi is a kind of paneer gravy recipe prepared from onions, tomatoes and cashews. A widely popular and loved dish that is commonly ordered at Indian restaurants, this paneer gravy recipe can be made with much ease at home as well.

You will require the following paneer handi ingredients to prepare this paneer gravy recipe at home: 

  1. 200 grams of paneer
  2. ½ cup tomatoes, finely chopped
  3. ⅓ cup onions, finely chopped
  4. 1 tsp ginger garlic paste
  5. 1 tbsp coriander leaves, finely chopped
  6. 3 tbsp cashews
  7. ½ tsp kasuri methi
  8. 1 small tej patta
  9. 1 inch cinnamon
  10. 2 cloves
  11. 2 green cardamom
  12. 2 single strands of mace
  13. ¼ tsp turmeric powder
  14. ¼ tsp kashmiri red chilli powder
  15. ½ tsp garam masala
  16. 1 green chilli, slit
  17. 2 tbsp ghee
  18. Water
  19. Salt

Follow the given instructions to prepare homemade handi paneer recipe:

  1. To prepare this paneer gravy recipe, we need to first prepare a cashew paste. For that, soak 3 tbsp of cashews in ⅓ cup of hot water for about 30 minutes.
  2. Thereafter, drain the water from the cashews and add the cashews to a blender jar along with 3-4 tbsp of water and prepare a smooth paste. Keep it aside. 
  3. Now, to prepare the paneer handi masala, in a pan heat 2 tbsp of ghee, and keep it on low flame. 
  4. Add the tej patta, cinnamon, cloves, green cardamom and mace as mentioned under the paneer handi ingredients. 
  5. Saute the spices until they start to give out an aroma. 
  6. Thereafter, add in the onions, and mix well on low to medium flame, stir often.
  7. Once the onions turn translucent, add in a pinch of salt, and saute till the onions turn golden in colour.
  8. Add in the ginger-garlic paste, a slit green chilli and coriander leaves. Saute till the aroma from the ginger-garlic paste is no longer there.
  9. Add in the chopped tomatoes, and saute on low to medium flame, till the tomatoes turn soft and mushy, and oil begins to release from the ingredients in the pan.
  10. Add to it the turmeric powder, kashmiri red chilli powder, and garam masala. 
  11. Mix and saute all the spices well. Then add in the cashew paste that you had prepared and mix well again.
  12. Once the oil begins to release from the paneer handi masala, add in the paneer and stir.
  13. Turn off the heat, and add the kasuri methi. Mix gently.
  14. Garnish with chopped coriander leaves, mix and serve hot.

Pro tip: You can add milk powder, or cream to this paneer gravy recipe to add a more creamier texture to the dish.
