Makhandi Halwa is a speciality of the Peshawar region of Pakistan. It is made with sooji but the unique texture comes from soaking the sooji for about an hour before making the halwa. The caramel taste comes from adding sugar to ghee and letting it cook and then adding the sooji to this caramel mixture. This method of cooking gives it a stretchy look. Dry fruits are added to the sugar syrup while cooking or can also be added as toppings. Makhandi Halwa is scrumptious and incredibly irresistible.

In a kadhai, add ghee and sugar. Stir the mixture till the sugar gets caramelised.

Next, add water, cardamom powder, chopped almonds, chopped pistachios, almond flakes and soaked semolina in the kadhai.

Keep stirring till all the ghee gets absorbed and halwa leaves the pan.

Garnish with chopped pistachios and almond flakes and serve.

Chhena Poda is an iconic and easy-to-make dessert from Odisha. It is made with chhena (Cottage Cheese). It means roasted or burnt cheese in the Odia language.This baked dessert is made by combining crumbled chhena, jaggery powder, cardamom powder, raisins and cashews. The chef drizzles this dessert with saffron infused sugar syrup and garnishes it with silver leaves and nuts.The burnt aroma of sugar and flavour of cardamom elevates this dessert to a new high.

Crumble the cottage cheese in a bowl, add jaggery powder and mix. 

Add cardamom powder, baking soda, rice flour, milk and mix. 

Add raisins, chopped cashew nuts and mix well. 

Grease the baking tin with butter and line it with banana leaves. Spread the mixture evenly. 

Bake the chhena poda in a preheated oven at 180 C for 25 mins.  

Demould the chhena poda and glaze it with sugar and saffron syrup. 

Garnish the chhena poda with edible silver leaves, cashew nuts and raisins.

Dubki wale Aloo is a wholesome saatvik food. It is made without onion and garlic and hence can be had during the festive season. The secret ingredient is the masala powder made with whole spices like cardamom both black and green, pepper, cloves and cinnamon.Bedmi puri is made with soaked split white lentils, spice powders and whole wheat and all-purpose flours.Hot puris served with Dubki Aloo make for a tasty and filling breakfast.

Mathura wale Dubki Aloo with Bedmi Puri

In a blender, add 1 cup soaked split white lentils, and blend coarsely. 

Transfer the mixture to a bowl and add ¼ tsp asafoetida, salt, 1 tbsp fennel seeds powder, 1 cup wheat flour, 1 cup all-purpose flour, 2 tbsp oil and mix well. 

Add water to make the puri dough. Divide the dough into dough balls. Roll out the puris . 

Deep fry the puris in hot oil until done.

In a blender, grind 1 black cardamom, 2-3 green cardamoms, 4 cloves, 7-8 black peppercorn, 1/2 inch cinnamon stick into a powder. Sieve the powdered masala. 

Heat oil in a pan and add 1/2 tsp cumin seeds, 1/2tsp fenugreek seeds, 3 dried red chillies, 1 tsp turmeric powder, 1 tbsp ginger paste, 1 tbsp green chilli paste and saute. 

Add water, prepared powder masala and mix. 

Add 3 boiled mashed potatoes and water as required. Cook on low flame for 12-15 mins.

Garnish with coriander & serve the dubki aloo with hot bedmi puris.

Vettu means cut in Malayalam. Vettu cake is cut cake - the mark that is made on the cake is the signature of this popular tea time snack of Kerala. This cake is unique with a crisp brown crust and a moist inside. It is not baked but deep fried. It’s a simple dish made with minimum ingredients. Chef Akanksha adds her own touch by adding a drizzling of cardamom black tea with icing sugar on the Vettu cake.The cut Vettu Cake makes for a great tea time snack.

Vettu cake with Chai Cardamom Glaze 

In a large bowl, whisk egg and castor sugar until combined.

Add flour and mix cut and fold method.

Add baking soda and cardamom powder. Knead gently to form a smooth dough.  Add oil to bring the dough together.

Rest the dough for 30 minutes. Divide the dough into two, form into a rectangular log.

Using a sharp knife, slice the dough into 3/4 to 1" thick slices. Make two deep cuts on each slice (forming a cross on top of the cake), keep aside.

Heat oil in a kadhai and deep fry, over a medium heat, until it turns golden brown.

Drain on to a kitchen towel and cool before serving.

Mix icing sugar and elaichi flavoured tea in a bowl to make the glaze.

Apply the glaze on the Vettu cake and serve.

However, a kheer made with onion may sound strange but Anokhi kheer is indeed a sweet dish made with onions.It is made with milk, white onions and sugar. Chef uses white onions as they are a little sweeter compared to the red ones. The addition of ghee, khoya, condensed milk, sugar and chopped dry fruits to the boiled milk along with onions enhances the flavour of this kheer.Anokhi Kheer is a simple, unique and tasty sweet dish that could surprise even a seasoned foodie.

Heat ghee in a pan, add sliced white onion and saute until the onions gets caramelised.

Boil milk in a pot and reduce it until half.

Add the caramelised onions to the reduced milk.

Add sugar, khoya, condensed milk to the milk mixture. 

Add saffron, chopped almonds, pistachios, crushed nuts and mix well.

Serve cold and garnish with pistachios.
