Thikri Ki Dal is made with soaked red lentils (Masoor Dal) slow-cooked in a pot. The different types of temperings make this dal unique. The first tempering is with onions, garlic and whole spices. The second is of red chillies, curry leaves and red chilli powder. And the last tempering is the one that gives this dal its name – Thikri, a small earthen diya is heated and added to the dal. This gives the dal a unique smoky flavour.This Thikri Ki Dal is rich, creamy and smoky.

Thikri Ki Dal

Cook soaked red split lentils in a clay pot with turmeric powder and salt.

Heat ghee in a pan, add cumin seeds, fenugreek seeds, sliced onions, chopped green chillies, chopped garlic and saute.

Pour the tadka into the dal and let it cook.

Heat a terracotta piece or thikri for 5-7 mins.

Heat ghee in a pan and add chopped red chillies, a few curry leaves, red chilli powder and mix.

Pour the tempering into the dal and mix well. 

Place the heated thikri into dal and close the lid.

Add chopped coriander leaves and mix. Serve hot with desi ghee and coriander sprig.

Tanka Torani is a rice-based drink from Orissa. In the olden days, it used to be prepared in the temples. It was in fact served as Lord Jagannath’s mahaprasad, in earthen pots inside the Jagannath Dham Puri, Orissa. Since then, the popularity of this drink soured and it soon became a staple in all households across the state.This healthy drink is made from leftover rice. It is lightly spiced and the addition of curd gives it a tangy flavour. The humble Tanka Torani is tasty and healthy.

In a bowl, add water to the leftover rice and smash it. Leave it overnight.

Next, add ginger, coriander leaves, Gondhoraj lemon leaves, green chillies, roasted cumin powder, and rock salt to the overnight fermented rice. Blend this in a mixer to make a puree.

Remove the puree in a bowl and add curd, Gondhoraj lemon juice, slices and leaves, and slit green chilli and mix well. 

Heat oil in a pan and add mustard seeds and curry leaves to it.

Pour this tempering on the rice puree and mix well.

Wash the cauliflower and cut the stem off. Heat water in a pot, and add salt. Blanch the cauliflower for 2 minutes on each side and set aside.

Heat oil in a kadhai and deep fry the cauliflower from both sides until light golden brown in colour and crisp in texture.

Heat oil in a kadhai and add cumin seeds, ginger paste, garlic paste, turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder and saute.

Add brown onion paste, salt, curd, cashew paste, poppy seeds paste and fry till the masala starts leaving oil from the sides.

Now add the fried cauliflower and coat it with the masala, cover and cook on dum.

Switch the flame off and keep it aside for 5 minutes undisturbed.

Heat ghee in another pan, and add a pinch of asafetida, cumin seeds and mix well. Add 1 cup green peas, salt and sauté.

Serve Gobhi Mussalam on a plate with some sautéed green peas. Garnish with fresh coriander sprig.

Naan is an all-time favourite Indian flatbread that is salty, crispy and flaky. There are several varieties of Naan, such as plain naan, butter naan and garlic naan. Naan is made with all-purpose flour (Maida) to which leavening agents such as curd, yeast, baking soda and baking powder are added. The dough is then allowed to rise until it doubles in volume. Round or oval-shaped Naans are made either by hand or by a rolling pin. Naan is then placed in a tandoor (a type of large clay oven), or if you are making it at home, you can bake it in an oven or on a tawa. Pair the warm, slightly charred from outside, fluffy and flaky Naan with dal makhani, butter chicken, aloo gobi, etc. and experience the sheer bliss of traditional Indian mouthwatering food.

In a bowl, mix yogurt, sugar, baking powder, baking soda, milk and maida. Knead the mixture into a soft dough. 

Drizzle some oil on the dough and continue kneading it. Divide the dough into equal dough balls and rest it for 5-7 minutes.

Flatten the dough ball; give it your desired shape; sprinkle some kalonji, coriander and chopped garlic on top of it.

Place it in the oven or tandoor. 

Flatten the dough ball and stuff it with some fried chopped garlic. Sprinkle on the dough and sprinkle kalonji and coriander; fold the dough and leave it to rest for 5 minutes. Place it in the oven or tandoor.

Spread some ghee on the flattened dough and start folding/pleating the dough; top it with kalonji and coriander and place it on the baking tray or tandoor and let it cook.

Once the Naan is out of the tandoor/oven drop a chunk of butter and serve hot with gravies and curries!

Rose and Pistachio Cheesecake is made with simple ingredients and is a no bake cake. Chef Pankaj uses digestive biscuits for the base along with butter and icing sugar. She adds pistachio paste to one part of whipped cream and rose syrup to the other, along with some icing sugar. Rose & Pistachio Cheesecake

Blend the cottage cheese to a smooth consistency in a blender jar. 

In another mixer jar add digestive biscuits, sugar powder, butter and blend coarsely.

Line a cake tin with butter paper. Place the biscuit mixture in the tin and spread evenly. Refrigerate for 10-12 mins until biscuit mixture base hardens.

Heat a pan and melt the china grass and set it aside.

In a big bowl, blend hung curd and cottage cheese using an electric mixer.

Divide it into two portions, one for pistachio cheesecake and another portion for rose flavoured cheesecake.

In one mixture add pistachio paste, sugar powder and green food colour. 

Add rose syrup to the other mixture.

Then add whipped cream, melted china grass to both mixtures. Cut and fold each mixture nicely.

Layer cheesecake mixture on the base one by one and spread evenly. First add the rose mixture followed by the pistachio mixture.

Let it set for 4-5 hours. Garnish with dried rose petals and sliced pistachios.
