- 4 tablespoons of vegetable oil,
- 2 tablespoons of butter
- 2 bell peppers, thinly sliced
- 1/2 onion, thinly sliced
- Kosher salt to taste
- Boneless skinless chicken breasts, sliced into strips ( you can also use chicken thighs)
- 1/2 tablespoon of chilli powder
- 1/2 tablespoon of ground cumin
- 1/2 tablespoon of dried oregano
- 4 medium corn tortillas (you can also use flour tortillas here)
- 4 cups of shredded Oaxaca cheese (if you are unable to have Oaxaca cheese, you can use any other gooey cheese like Monterey Jack or mozzarella cheese)

- Take a skillet, and add 1 tablespoon of oil over medium-high heat. Now, add bell peppers, onions and salt to taste and cook for about 5 minutes or until they become softer. Then, transfer this mixture into a bowl.
- Add 1 tablespoon of oil again to the same skillet and heat over medium-high heat.
