Chicken a la kiev or chicken kiev is an authentic Russian recipe that is a fried chicken dish, with a stuffing of melted garlic butter that oozes from the inside of the dish. A dish made of crunchy, golden brown chicken breast, that is juicy and tender on the inside, chicken a la kiev will leave both your heart and your tummy satisfied. Mastering the chicken kiev recipe isn't all that difficult a task because this classic recipe is prepared from a few basic chicken kiev ingredients such as butter, garlic, a few herbs, chicken breast and batter made from breadcrumbs, eggs and flour. You will require the following ingredients to prepare chicken kiev recipe at home:

  1. 8 boneless chicken fillets
  2. 5 eggs, beaten
  3. 4 garlic cloves, crushed
  4. 2 tbsp finely chopped parsley
  5. ½ lemon juice
  6. Pinch of paprika
  7. 4 tbsp of vegetable oil
  8. 100 grams of plain flour
  9. 225 grams of dried breadcrumbs
  10. 200 grams of softened butter
  11. 75 grams of parmesan, grated

Follow the given step-by-step instructions to prepare chicken kiev recipe:

  1. To prepare chicken kiev filling, add the butter and garlic to a bowl, season well and mash with a fork until both the ingredients are well combined. 
  2. Once the butter and garlic are well combined, shape them into two sausage-like shapes, and tightly wrap and freeze it until they turn firm.
  3. Place the chicken fillet in a chopping board, and make deep pockets on the chicken breast with the help of a sharp knife. Make sure to not cut the chicken breast all the way through. Do the same procedure for all the chicken fillets. 
  4. Thereafter, push two discs of butter that you had prepared earlier into each of the chicken fillets, and press and flatten the chicken to seal the chicken with your hands. Once done, set aside.
  5. Add the breadcrumbs and the parmesan to a bowl. In another container add the beaten eggs, and in a third container mix salt, paprika and flour. 
  6. Dip the stuffed chicken pieces first in the flour mixture, then the eggs and finally coat it with the breadcrumbs. Repeat the same procedure for all the chicken pieces. 
  7. Set aside the stuffed and coated chicken pieces in the refrigerator for about an hour, or freeze the same.
  8. Heat oil in a frying pan over medium to high heat and fry the chicken kievs in batches until they turn golden brown in colour.
  9. Once fried, transfer the chicken kiev to a baking tray and cook for another 20 to 25 minutes.
  10. Serve hot.

Pro tip: Always freeze the chicken kievs on the same day that you plan to prepare them.
