Sweet Delight: Authentic Thai Mango Rice Recipe

What often comes to mind when one thinks of Thai cuisine happens to be spicy noodles, umami rice dishes, and flavourful salads. However, that is not all that it is limited to. Thai food is rich in flavours, and no matter what kind it is that you’re craving, there’s something for you. This also extends to desserts, and the very famous Thai mango sticky rice happens to be a great example of that. Sweet, sticky, and juicy, mango rice is a perfect dessert for summer. It is cooling, easy to make, and perfect for beginners.

This simple Thai dessert uses very few ingredients, but it is important to understand what each ingredient brings to an authentic Thai mango sticky rice recipe.

  1. Short-grain sticky rice: For the mango sticky rice recipe, you need glutinous rice or sweet rice. This rice cooks and thickens into a chewy texture which makes for a perfect base for the mango sticky rice. In case the Thai rice used in this recipe isn’t available, you can also for any short-grain rice as they have a similar texture to what is needed in the mango rice recipe.
  2. Coconut milk: You can either buy prepackaged coconut milk to use in your mango rice recipe, or in case you want to make it fresh, just blend the coconut flesh and strain.

  5. Sugar
  6. Ripe mangoes: Make sure that you use sweet fully ripe mangoes. In case you’re unsure of the varieties to use, go for the ones which have the least fibre and are the sweetest.

  1. To start with, soak the rice for at least 4 hours. You can also soak it overnight.
  2. In a pan, boil the rice till the water is absorbed and the rice turns mushy for the mango rice recipe.
  3. In another saucepan, add the coconut milk, salt, and sugar, and simmer till it turns slightly thicker. Add a bit of this coconut sauce to the rice, and mix it well.
  4. As it gets to room temperature, add some of this rice to a bowl, layer some cool chopped mango pieces on top, and drizzle the coconut sauce on top.
