For Chenna Tikki
1 cup chenna
1 tsp wheat flour
1 tbsp semolina
2 tbsp sugar
ghee or oil for frying
For Ras
1 litre milk
1/2 cup sugar
½ tsp cardamom powder
PREPARATION
- Mix Chenna, sugar, semolina, wheat flour and knead the mixture by using the heel of your hand, till a soft dough is achieved. This should take around 7-8 minutes.

- Then divide the dough into small equal portions and make flat round disc of it.

- Fry the chenna tikki on medium low flame till its golden brown.

- Boil milk in a pan. Add sugar and cardamom powder and let it cook on low flame for another 5 minutes.

- Now, add the fried chenna and cook for another 2 minutes.

- When done, take it off the flame, garnish with chopped pistachios and serve.

Rasabali is a traditional sweet dish from Orissa. It is made from chenna. The chenna tikki is deep-fried and soaked in creamy, thickened flavoured milk. Rasabali is offered to God Shri Baldev Jew and is part of the chapana bhoga of the Jagannath Temple.
The rich, creamy Rasabali is an amazing amalgamation of taste and flavours.
