Ingredients For Jini Dosa Recipe

  • For Schezwan Chutney

    • 3-4 tbsp oil

    • 2 chopped onions

    • 1 tbsp chopped ginger

    • 7-8 chopped garlic cloves

    • 1 bay leaf

    • 1 cinnamon

    • 3-4 star anise

    • 3-4 cardamom

    • 2 tbsp red chilli paste

    • 1 tbsp red chilli sauce

    • 1 tbsp green chilli sauce

    • 3-4 tbsp tomato ketchup

    • salt to taste

  • For Jini Dosa Batter

    • 1 cup gram flour

    • 1 tbsp semolina

    • salt to taste

    • 1 tsp powdered sugar

    • water as required

    • 3-4 cups dosa batter

  • For the stuffing

    • 2 tbsp thinly sliced cabbage

    • 2 tbsp thinly slices carrots

    • 2 tbsp bellp pepper juliennes

    • 1 tbsp thinly sliced tomatoes

    • salt to taste

    • 2 tbsp grated cottage cheese

    • 1 tbsp fried noodles

    • 1 ½ tbsp Schezwan chutney

    • 2 tbsp mayonnaise

  • For the dosa

    • 1 tsp oil

    • 1 tsp butter

    • 1 tbsp Schezwan chutney

    • 2-3 tbsp grated cheese

  • For garnish

    • Schezwan chutney

    • coconut chutney

    • butter

    • grated cheese

    • spring onion

How to make Jini Dosa Recipe?

  1. To make Schezwan chutney, heat in a pan and add chopped onions, chopped ginger, chopped garlic, bay leaf, cinnamon, star anise, cardamom, red chilli paste, red chilli sauce, green chilli sauce, tomato ketchup and salt and mix well.
  2. To make Jini dosa batter, mix gram flour, semolina, salt, powdered sugar with water and let it rest for a few minutes.
  3. Next, mix this gram flour batter with the regular dosa batter and keep it aside.
  4. For the stuffing, in a bowl mix together thinly sliced cabbage, carrots, bell pepper, tomatoes, salt, grated cottage cheese, fried noodles, Schezwan chutney and mayonnaise.
  5. To make the Jini dosa, heat the tava and spread some batter on it. Spread some butter on the dosa.
  6. Next, spread Schezwan chutney on the dosa and the mixed veggies and grate cheese over it.
  7. Fold the dosa, remove in a plate and serve with Schezwan chutney, coconut chutney, and butter and garnish with spring onion and cheese.

Jini Dosa is a popular street food from Mumbai. It is a fusion of the much-loved South Indian dosa and the ingredients of the other popular street foods of Mumbai.

The dosa batter is regular south Indian batter but the chef adds gram flour mixture to it and makes a dosa from it and stuffs it with a stuffing of mix veggies like cabbage, carrots, capsicum and Schezwan chutney topped with loads of cheese.
