Sev Batata Puri, also commonly known as Sev Puri is a popular street food in Mumbai. Batata puri is a famous chaat recipe, packed with flavours from the various sauces and chutneys that are added to the dish. Sev puri chaat is prepared from papdis or puri for sev puri, along with boiled or mashed potatoes and topped with tomatoes, onions and a range of spices, sauces and tangy chutneys. Sev puri chaat can be had as a popular chaat item, starter or even as a light dinner. Learn how to make Sev Batata Puri with this simple recipe to bring in the flavours of the streets of Mumbai into your homes.

  1. 14 papdi or puri for sev puri
  2. 1 medium or large size potato, boiled and sliced
  3. 1 medium size onion, finely chopped
  4. ½ cup nylon sev
  5. ¼ to ½ tsp chaat masala
  6. 4 tbsp coriander leaves, finely chopped

Red chutney ingredients:

  1. 14 Kashmiri red chillies, deseeded
  2. 4 medium size garlic cloves
  3. ½ tsp sugar
  4. Salt to taste

Green chutney ingredients: 

  1. 2 green chillies
  2. 1 to 2 tbsp onions
  3. 1 garlic clove
  4. 1 to 2 tbsp fried gram
  5. ½ inch ginger
  6. 1 and ½ to 2 cups of coriander leaves
  7. ½ to 3/3 cups of mint leaves
  8. ½ cup cumin seeds
  9. Lemon juice
  10. Water
  11. Salt

Tamarind chutney ingredients:

  1. 2 tbsp seedless tamarind
  2. ¼ cup jaggery
  3. ¼ tsp dry ginger powder
  4. ¼ tsp red chilli powder
  5. ¼ tsp coriander powder
  6. Water
  7. Salt

  1. To prepare the green chutney for sev puri, add all the mentioned ingredients in a blender jar and make a fine paste. Add water to balance the consistency of the chutney as per your preference. 
  2. To prepare the red chutney for sev puri chaat, soak the red chillies in very little hot water and set them aside.
  3. Once the chillies have softened, add the chillies in a blender along with the garlic, salt and sugar, and blend them all together. Make a fine paste, and add water to adjust the consistency.
  4. Now to prepare the tamarind chutney for batata puri, add the tamarind, jaggery, red chilli powder, cumin, and coriander powder to very hot water. Wait till the tamarind softens.
  5. Cool the ingredients, drain the water and pass the ingredients through a strainer. 
  6. Add the ginger and salt, and add water to reach a consistency of your choice. 
  7. To prepare sev puri chaat, place the puri for sev puri as individual serving plates, and add the boiled potatoes on top.
  8. Add the red chutney, along with some onions.
  9. Then add the green chutney and the tamarind chutney.
  10. Sprinkle chaat masala, along with a large amount of nylon sev.
  11. Garnish with chopped coriander, and serve immediately.

Pro tips: You can customise the sev puri ingredients as per your choice, and add raw mango slices, curd, amchur powder, roasted chana dal or farsan to enhance the taste of the dish.
