An excellent cocktail that originated in Italy, bellini, the drink was first ever prepared in 1948 by Giuseppe Cipriani, who was a well-known bartender at Harry’s Bar in Venice. The classic bellini as made by Cipriani consisted of champagne, white peach pulp, and a slight addition of raspberry puree. Light pink in colour, the bellini champagne cocktail had a pleasant fruity taste and sweet aroma. Loved by all the guests at Harry’s Bar, bellini gradually gained popularity and the cocktail came to be well known across the world.

There’s often confusion regarding the difference between bellini and mimosa since both are extremely popular brunch cocktails. A mimosa cocktail is made from champagne, and orange juice, whereas a bellini consists of prosecco and peach puree. Although, there is believed to be similarity in the appearance of both the cocktails, bellini the drink has a more smooth and creamy texture to it.

You will need the following bellini cocktail ingredients to make an amazing glass of bellini at home:

  1. 4 medium size, ripe peaches
  2. Few peach slices
  3. 1 bottle of chilled prosecco

Follow the given steps to make a stunning glass of bellini cocktail recipe:

  1. Peel the peaches, and slice them into halves, while also removing the pits.
  2. Add the peeled peaches into a blender, and make a smooth puree of the same.
  3. Refrigerate the prepared peach puree for the bellini cocktail for at least 30 minutes, for it to cool. The peach puree is best served chilled when preparing a bellini recipe.
  4. Once the peach puree is cold enough, pour ¼ cup of the peach puree into a champagne flute.
  5. Over it add the chilled prosecco, and be careful not to overflow the glass. 
  6. Stir the bellini cocktail with a spoon to combine all the bellini ingredients.
  7. Top the bellini the drink off with another splash of prosecco and a few peach slices, as per your liking, and serve.

Pro tip: You can also prepare your bellini recipe with frozen peaches. Make sure to completely defrost the peaches at room temperature, before you blend them, for at least 3-4 hours, or in the refrigerator overnight.
