INGREDIENTS
For Arrabbiata Sauce
4 blanched and chopped tomatoes
1 tsp oil
1 bowl chopped onion
1.5 tsp chopped garlic
2-3 tsp tomato puree
salt to taste
1 tsp crushed pepper
For pasta dough
durum wheat flour
2 eggs
water if required
For pasta
1-2 tsp extra virgin olive oil
1-2 tsp chopped garlic
1-2 tsp chilli flakes
1-2 tsp oregano
1 tsp crushed pepper
handful of chopped olives
1 bowl chopped and boiled broccoli
1 bowl chopped and boiled zucchini
salt to taste
handful of basil leaves
1 dollop buttter
1 bowl parmesan cheese
For garnish
few fresh basil leaves
some broken olives
1 tsp extra virgin olive oil
a pinch of pepper
PREPARATION
- Add salt in boiling water. Then blanch the Tomatoes i.e., place the tomatoes in the boiling water keep it for 30 seconds, take them out and immediately put them in cold water.

- Prepare the pasta dough.

- For the pasta sauce, take the blanched tomatoes, remove their skin and chop them fine. Put some normal oil in a pan and add some Onions and a little bit of garlic to it. Add herbs and celery.

- Roll out pasta in the pasta machine.

- Saute the Onions and Garlic lightly and add the chopped tomatoes in it and cook it patiently. Add salt, crushed pepper, basil leaves and mix

- Take water in a pan, add salt and oil into it. Add pasta into the water to boil. Take out the boiling pasta after 9-10 minutes.

- Drain off the excess water and mix in a little extra virgin Olive Oil and toss it, so that the pasta doesn’t stick together.

- Take a fresh pan and put some extra virgin Olive Oil in it. Then add Garlic, Chilli flakes and Oregano. Sauté on a slow flame. Let it cook but the Garlic should not go brown.

- Add the ready sauce into the garlic. To add more flavour, pour pasta stock. Now add some crushed Pepper for flavour.

- Then add some chopped Olives and the boiled vegetables (Zucchini). Now add very little salt. Sauté a bit and then add the sauce to it.

- After this add Basil and mix it well. Now add the boiled pasta in this and toss it nicely. After this add a dollop of Butter and some Parmesan Cheese in it.

- Give it a toss and mix it very lightly so that the pasta doesn’t break.

- Your pasta is ready. Serve it in a dish and garnish it with some Basil, Olives, Pepper, Parmesan cheese and very little extra virgin Olive Oil.
