INGREDIENTS
For Base
200 gm digestive biscuits
¼ cup melted butter
For Filling
200 gm paneer
1/2 cup ruby chocolate
1/2 cup thick curd
1/2 cup sweetened condensed milk
1 tbsp gelatine
¼ cup water
1 cup whipped cream
PREPARATION
- Take digestive biscuits and crush them. Add melted butter and mix well. Transfer it into a square mould and pat it down so that it lays flat.

- On a double boiler, melt the ruby chocolate till smooth and shiny.

- Now take paneer and curd in a bowl and whisk it till a smooth consistency is achieved. Add condensed milk and combine well.

- Take little gelatine in a separate bowl, add 3 tbsp warm water and mix. Now place the gelatine bowl in hot water and leave it till grains dissolve.

- Now, add this to the paneer mixture and fold gently. Add whipped cream and melted ruby chocolate and fold again.

- When mixture is well combined, pour this over the biscuit base and chill in fridge for 7-8 hours or overnight.

- When done, carefully unmould it. Serve chilled with a drizzle of melted ruby chocolate and mint leaves.
