Ingredients For Murukku Recipe

  • For Murukku

    • 1 cup rice flour

    • 1 cup urad dal flour

    • 1 cup pottukadalai flour (futane flour)

    • 2 tbsp ghee

    • 1 tsp black sesame seeds

    • oil for deep frying

    • 2 pinches asafoetida

    • salt to taste

How to make Murukku Recipe?

  1. In a bowl add rice flour, urad dal flour, and pottukadalai flour. Add 1 tbsp sesame seeds, asafoetida, salt and ghee, Mix well.
  2. Add water and make a smooth soft dough. Keep it covered always.
  3. Grease the murukku gun with ghee so that the dough does not stick.
  4. Place dough in the gun and with consistent pressure and a spiral hand motion create the murukku shape onto the plate.
  5. Gently transfer the squeezed murukkus to hot oil.
  6. Fry on both sides on medium flame. Remove once crispy and golden brown. Drain in a kitchen towel. Repeat the same process for the rest of the dough.
  7. Crispy murukku is ready.

Murukku is a deep-fried round spiral shaped snack from South India. This traditional savoury delicacy is made with three different flours such as rice flour, urad dal flour and pottukadalai flour (roasted gram flour), some spices and sesame seeds. The three flours are mixed with spices and kneaded into a dough. The dough is shaped into spiral or coil shapes either by hand or by using a mould.

The spiral murukku is then deep-fried till golden brown. The crispy, crunchy Murukku is a great anytime, on-the-go snack.
