INGREDIENTS
1 medium head napa cabbage
1/4 cup salt
1 tbsp grated garlic
1 tsp grated peeled fresh ginger
1 tsp granulated sugar
2 tbsp fish sauce
1 - 5 tbsp red pepper flakes
250 gm radish, peeled and cut into matchsticks
4 scallions, trimmed and cut into 1-inch pieces
PREPARATION
- Cut the napa cabbage into bite site pieces and salt it. Set it aside for some time.

- Rinse the cabbage with cold water. Squeeze the excess water and transfer the cabbage to a bowl.

- Add radish, carrots, spring onions, crushed garlic, ginger, sugar, fish sauce, chilli flakes and mix well.

- Transfer the kimchi to a jar and refrigerate for 5 days.
