Ingredients For Dahi Bhalla Papdi Chaat Recipe

  • For chutney

    • 2 tbsp coriander seeds

    • 1 tbsp cumin seeds

    • 3 dry red chillies

    • 2 tbsp black pepper

    • 1 tbsp fennel seeds

    • 100 gm tamarind

    • 100 gm jaggery

    • 2 tbsp watermelon seeds

    • 1 tsp black salt

    • ½ tsp roasted cumin powder

    • ½ tsp black pepper

    • 2 tbsp raisins

    • 2 tbsp cashews

    • 1 tbsp red Kashmiri powder

    • 1 tsp ginger powder

  • For Bhalla

    • 1 cup urad dal (white lentils without skin)

    • 1/4 cup moong dal

    • 1 tsp shahi jeera

    • water for soaking

    • 1/2 cup curd

    • 2 tbsp salt

    • ½ tbsp black salt

    • ¼ tsp asafoetida

  • For spice mix

    • 1 tbsp coriander powder

    • 1 tbsp roasted cumin powder

    • 1 tsp black salt

    • 1 tbsp dry mango powder

    • 1 tsp red chilli powder

  • Other Ingredients

    • 100 gm curd

    • 2 tbsp powdered sugar

    • 1 tsp black salt

How to make Dahi Bhalla Papdi Chaat Recipe?

  1. In a pan, dry roast coriander seeds, cumin seeds, dry red chillies, black pepper and fennel. Dry roast all the spices and make a spice mix.
  2. In another pan add tamarind, jaggery and water and let it boil.
  3. Add the spice mix and let the chutney cook till it thickens.
  4. Soak the Urad dal and Moong dal for 6 hours or overnight. Grind the dals together with very little water to a smooth paste (just like vada batter).
  5. Remove batter into a dish and add shahi jeera. Whisk the batter for a few minutes till light and fluffy.
  6. Make small balls of the batter and deep fry in medium hot oil.
  7. For soaking, take water in a bowl, add curd, salt, kala namak and hing, mix the ingredients.
  8. Add the fried bhallas in the seasoned water and let it soak till the bhallas drink the water and settle in the bowl below.
  9. Remove the bhallas and squeeze out extra water from it, crush them little while pacing on the plate.
  10. In the curd add powdered sugar, kala namak and pour it on the bhalla.
  11. Sprinkle the spice mix on the bhallas.
  12. Add tamarind chutney, green chutney, add papdi in chutney and then add on the plate.
  13. Pour curd again on the bhallas followed by some more chutneys, chopped potatoes, boiled chana, spice mix, more curd, anardana and ginger juliennes.
