  • For Cauliflower Rice Biryani

    • 3 cups grated cauliflower

    • ½ cup chopped green beans

    • ½ cup chopped carrots

    • ½ cup chopped potatoes

    • ½ cup green peas

    • 1 cup curd

    • 1 bay leaf

    • ½ tsp caraway seeds

    • 1 tsp chopped ginger

    • 2 green chillies

    • 1-2 green cardamom

    • 3-4 cloves

    • ½ cinnamon stick

    • 1-2 tsp rose water

    • 1 tsp turmeric powder

    • rock salt to taste

    • 2 tbsp ghee

    • 1 tsp dried fenugreek leaves

    • 7-8 mint leaves

    • pinch of mace powder

    • pinch of cardamom powder

    • rock salt to taste

    • 5-6 saffron strands

    • 10-12 fried cashew nuts

    • 1 tsp ghee

    In a bowl, add 1/2 cup chopped green beans, chopped 1/2 chop carrots, 1/2 cup chopped potatoes, 1/2 cup green peas, 1 cup curd, 1 bay leaf, 1/2 tsp caraway seeds, 1 tsp chopped ginger, 2 green chillies, 1-2 green cardamom, 3-4 cloves, 1/2 cinnamon stick, 1-2 tsp rosewater, turmeric powder, rock salt to taste and mix it properly.

    In a pan, add 2 tbsp ghee, pour the prepared mixed vegetables into it and let them cook.

    Add 1 tsp dried fenugreek leaves, mint leaves, a pinch of javitri powder (mace powder), cardamom powder and mix it properly.

    Add salt to taste, 3 cups of grated cauliflower, saffron strands, fried cashew, ghee, and cover the pan with the lid and let it cook for 10 minutes.

    Cauliflower rice biryani is now ready. Serve it with raita.

Cauliflower Rice Biryani is not made with rice instead, the finely grated cauliflower is used like rice. The chef mixes plenty of vegetables like carrots, potatoes, French beans, and green peas with curd. This base of biryani is cooked with grated cauliflower and sprinkled with saffron, nuts and ghee. 

As per Ayurveda, cauliflower is rich in water and vitamins. It is easy to digest, especially for pitta and Kapha body types. 

This unique biryani is healthy and delectable.
