INGREDIENTS
For Butternut Squash and Potato Curry
2 tbsp ghee
pinch of asafoetida
4-5 cloves
4-5 green cardamom
1 bay leaf
1 cinnamon stick
7-8 peppercorns
1 tsp turmeric powder
1 tsp coriander powder
1 tsp cumin powder
water as required
rock salt to taste
1/4 cup curd
1 cup chopped tomatoes
1 chopped potato
2 cups chopped butternut squash
1/2 tsp dried fenugreek leaves
water as required
PREPARATION
- In a pan, add 2 tbsp ghee, asafoetida, 4-5 cloves, 4-5 green cardamom, 1 bay leaf, 1 cinnamon stick,7-8 black peppercorns, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin powder, water as required, rock salt as per taste and mix it properly.

- Add 1/4 curd to it and mix well.

- Add 1 cup chopped tomatoes, 1 chopped potato and 2 cups chopped butternut squash and let it cook.

- Add 1/2 tsp dried methi leaves and give it a good stir.

- Add some more water, cover the pan and let it simmer until the potatoes and butternut squash is perfectly cooked.

- Butternut squash and potato curry is now ready, serve it with vegetable pulav.
