Ingredients For Butternut Squash and Potato Curry Recipe

  • For Butternut Squash and Potato Curry

    • 2 tbsp ghee

    • pinch of asafoetida

    • 4-5 cloves

    • 4-5 green cardamom

    • 1 bay leaf

    • 1 cinnamon stick

    • 7-8 peppercorns

    • 1 tsp turmeric powder

    • 1 tsp coriander powder

    • 1 tsp cumin powder

    • water as required

    • rock salt to taste

    • 1/4 cup curd

    • 1 cup chopped tomatoes

    • 1 chopped potato

    • 2 cups chopped butternut squash

    • 1/2 tsp dried fenugreek leaves

    • water as required

How to make Butternut Squash and Potato Curry Recipe?

  1. In a pan, add 2 tbsp ghee, asafoetida, 4-5 cloves, 4-5 green cardamom, 1 bay leaf, 1 cinnamon stick,7-8 black peppercorns, 1 tsp turmeric powder, 1 tsp coriander powder, 1 tsp cumin powder, water as required, rock salt as per taste and mix it properly.
  2. Add 1/4 curd to it and mix well.
  3. Add 1 cup chopped tomatoes, 1 chopped potato and 2 cups chopped butternut squash and let it cook.
  4. Add 1/2 tsp dried methi leaves and give it a good stir.
  5. Add some more water, cover the pan and let it simmer until the potatoes and butternut squash is perfectly cooked.
  6. Butternut squash and potato curry is now ready, serve it with vegetable pulav.
