Ingredients for Badam Peda with Badam Milk Recipe

  • For Badam Milk

    • 1 cup soaked almonds

    • 3 cups water

    • ¼ tsp cardamom powder

    • pinch of black pepper powder

    • pinch of nutmeg powder

    • 4-5 saffron strands

    • 1 tsp rose water

    • 2 tbsp honey

    • chopped almonds & pistachios for garnish

  • For Badam Peda

    • 1 cup almond solids

    • 2 tbsp jaggery

    • ¼ tsp cardamom powder

    • saffron strands for garnish

How to make Badam Peda with Badam Milk Recipe?

    In a mixer grinder, grind 1 cup of soaked almonds with 3 cups of water until it forms a thick watery paste.

    Once the paste is ready, using a muslin cloth, filter the prepared paste to get almond milk.

    In a pan, heat the prepared almond milk, add ¼ tsp cardamom powder, a pinch of black pepper powder, a pinch of nutmeg powder, 4-5 saffron strands, 1 tsp rose water and boil it.

    Once it cools down, add 2 tbsp honey to it and garnish it with chopped almonds and pista. Badam milk is ready to serve.

    In a pestle, crush 2 tbsp jaggery to make a fine powder. Add 1 cup of almond solids, ¼ tsp cardamom powder and mix it gently with your hands.

    Once the mixture is ready, make small balls from it and garnish them with saffron strands. Badam peda is ready to serve.

According to Ayurveda, eating almonds (Badam) makes the brain sharp, and almonds also give strength and bring agility to the body. Chef Kunal shares the recipes for two badam-based desserts. Generally, pedas are made with khoya (mawa), but in this recipe, the chef uses milk derived from badam, i.e., almond milk, to make badam milk and badam peda.

He infuses the desserts with saffron, cardamom powder, nutmeg, and rose water to make them more flavourful and delectable. These delightful desserts are great for people allergic to dairy products.
