INGREDIENTS
For Anjeer Barfi
8-10 figs (anjeer), soaked for 2-3 hours
3-4 tbsp ghee for greasing
1 tsp poppy seeds
12-15 dates, seeded
10-12 cashew nuts, finely chopped
8-10 almonds, finely chopped
12-15 pistachios, finely chopped
1 tsp green cardamom powder
1 tsp dried rose petals
silver varq as required
PREPARATION
- Heat ghee in a non-stick pan. Add ¾ of the cashewnuts, ¾ of the almonds and ¾ of the pistachios, mix poppy seeds and cook for 3-5 minutes.

- Grind soaked figs and seedless dates together to make a smooth paste and add it to the pan, mix well.

- Add green cardamom powder and dried rose petals, mix well and cook till the mixture starts to leave the sides.

- Put the mixture onto butter paper and roll it to desired shape, leave to cool. Once cool unwrap it. Cover the top with some varq and then slice.

- Serve garnished with remaining nuts.

Anjeer Barfi is a guilt-free Indian sweetmeat. It is made with dried figs or anjeer. One can it this sweetmeat guilt-free because it is made without sugar. Instead, the dates, dried figs and nuts provide the sweetness. A little bit of ghee is required to bring all the ingredients together.
