INGREDIENTS

  • For ghotala masala

    • 6 - 7 green chillies

    • 6 - 7 garlic cloves

    • fresh coriander

    • 1 tomato

    • oil

  • For anda ghotala

    • 4 - 5 boiled eggs

    • 1 egg (uncooked)

    • green masala (pre-made)

    • 2 onions

    • 2 tomatoes

    • 1 tsp turmeric powder

    • salt to taste

    • 1 tsp red chilli powder

    • 1 tsp coriander powder

    • 1 tsp garam masala

PREPARATION

    Grind green chillies, coriander leaves, garlic, tomato and oil into a smooth paste.

    Heat oil in a pan and add the green paste. Add turmeric powder, salt, chopped onions and tomatoes and cook it well.

    Add the red chilli powder, garam masala, coriander powder and salt and continue cooking.

    Add 3-4 chopped egg whites, one raw egg and grate the rest of the boiled eggs and mix well.

    Finish it with grated cheese and fresh coriander.

    Serve Anda Ghotala with buttered pav!

Anda Ghotala is said to have originated in Surat, a flourishing trade centre in Gujarat, India. Ghotala means confusion and since this dish is a hodgepodge of different preparations of egg, the name Anda Ghotala may have been attributed to it.

In this dish, scrambled eggs, boiled eggs and raw eggs are combined and cooked with tomatoes, onions, and masalas. This lip-smacking and spicy dish is served with pav.
