Ingredients For #utopia! Recipe

  • 100 g black raisins

  • 100 g raisins

  • 150 g pitted dates

  • 100 g dried apricots

  • 100 g dried plums

  • 100 g pitted prunes

  • 25 g orange peels

  • 100 g dried figs

  • 100 ml white wine

  • 100 ml orange juice

  • 250 g salted butter (softened; extra for greasing)

  • 250 g multi grain flour

  • 250 g crushed jaggery

  • 5 eggs

  • 100 g almonds powder

  • 50 g almond

  • 50 g cashew nuts

  • 50 g pistachio

  • 50 g walnut

  • Zest of one orange

  • 8 pcs cloves 4-cm stick cinnamon ¼ tsp nutmeg

  • Pinch of salt

  • 2ml vanilla extract

How to make #utopia! Recipe?

  1. In a glass container, take the diced dry fruits and orange peels mix it with orange juice and white wine. Keep it aside for 15-20 days. Give it a good mix after every 2-3 days.
  2. When the dry fruits absorb all the juices you are done with the pre soaking phase!
  3. Pre-heat the oven to 160 degree C and line an 8 inch round cake pan with parchment paper.
  4. In a bowl whisk together flour,the spice dusts and orange zest and set aside.
  5. Whisk together jaggery and butter in a separate bowl until pale and well combined.
  6. Now add the eggs one at a time to the butter and jaggery mixture and mix well.
  7. Add the vanilla extract. Gently fold in the dry ingredients and mix until everything is well combined and there are no large flour pockets in the batter. Do not over mix at this stage.
  8. Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped walnuts, almonds and cashews in the batter and transfer the batter to the prepared cake pan.
  9. Bake at 140C for 90-120 minutes or only until a skewer inserted in the center comes out clean.
  10. Top the cake with the leftover soaked fruits and serve!
  11. Can be stored for 3 months with feeding white wine occasionally
