Ingredients For Slow cooked bottle gourd and coconut cake (Lauki aaur coconut poda pitha) by Dr.Pratyusha Recipe

  • Bottle gourd

  • Rice flour

  • Grated Coconut

  • Coconut water

  • 2 hand full roasted almonds

  • Some rosted peanuts

  • Milk

  • 2 tbs of jaggery and 2 cups of sugar

  • Ghee or refined oil

  • Baking soda

  • Salt

  • For garnishing - cherry, tuti futi, cashew nuts, sliced coconut

  • Cadamom powder and fennel seeds

How to make Slow cooked bottle gourd and coconut cake (Lauki aaur coconut poda pitha) by Dr.Pratyusha Recipe?

  1. Take a fresh bottle gourd then peel it properly then cut it in to 5 to 6 bigger pieces. Then boli it in salt water for about 10 min.
  2. Now take out the pieces and soak all the excess water from it with a clean cloth. Then evenly grate it.
  3. Now take a pan, switch on d flame ,add some ghee into it .Then add all the grated bottle gourd into the pan and saute it for 5 to 6 min.
  4. On the other side take a Bowl and add all the grated coconut and jaggery and mix it.keep it aside so that they will bind to each other.
  5. Then coursely grind all the roasted almonds and roughly chop all the peanuts.
  6. Now add coconut jaggery mixture into the pan and then add 1/2liter of milk into the sauted bottle gourd mixture. Now at this time add 2 cups of sugar and mix. Also add the cadamom powder.
  7. Switch off the flame & Now gradually add rice flour in to the pan while continuously stirring it to avoid lump formation.
  8. Now the batter is ready. The consistency of the batter should be in between not too flowy & not very thick.
  9. Now in to the batter add the coconut water +coursely grinded almonds and roughly chopped peanuts with that add 1tbs of baking soda and a pinch of salt ,just to enhance the sweetness.Now add 1 tbs of fennel seeds also.
  10. Now it's time to pour the batter.
  11. Now rest the batter for about 15 mins.Now the batter is ready to be poured.
  12. Now take a pressure cooker or a heavy bottom pan. Then grease it with ghee properly and put it on flame. Pour the batter into that vessel.
  13. Now for garnishing add some chopped cherry, some cashew nuts or tuti futi or anything of your choice.
  14. Now cover the lid properly and remove the whistle.
  15. 1st cook it in high flame for about 10 min the slow the flame and cook it for about 30min. Then switch off the flame and let it cool down for a while ,then take out cut it in to pieces and serve.
