Ingredients For Lemon and fruit cake Recipe
Nuts (walnuts, pecans or hazelnuts), coarsely chopped – ½ cup
Dates, coarsely chopped – ½ cup
Raisins – ½ cup
Wheat flour – ¾ cup
Nestle milk maid - 1/2 cup
Baking powder – ½ tsp
Sugar – ¾ cup
Salt – ½ tsp
Eggs - 3
Vanilla extract – 1 tsp
Lemon zest, grated –1/2 tbsp
For lemon glaze Castor sugar 1 cup Lemon juice 2 tbsp Lemon zest 1 tsp
How to make Lemon and fruit cake Recipe?
- Chop all the nuts, raisins, cherries and keep it aside.
- Take a large bowl and add all the nuts, dates, dried pineapple and cherries.
- Add the wheat flour, sugar, Milkmaid ,baking powder and salt and combine properly.
- Add all the chopped nuts to the mixture and stir appropriately until the nuts and fruit are well coated.
- In a small bowl, beat the eggs until the foam is formed and then add vanilla extract.
- Add the egg batter to the nut mixture and mix well. Pour the mixture into a greased and parchment paper-lined pan.
- Keep the tray in a oven and bake at 300°C for 1 hour and 20 mins until a toothpick inserted in the centre comes out clean and non-sticky.
- Allow it to cool for 10 minutes before removing from the pan.
- Make Lemon glaze: In one cup of castor sugar add lime juice and lime zest and mix well. Adjust the consistency such that it drips from the cake surface. Spread the glaze on cake and decorate with nuts , lemon slices and mint leaves.
