  • 4 medium russet potatoes

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  1. Preheat oven to 400
  2. Line a baking sheet with parchment paper and set aside.
  3. Scrub potatoes well to remove any dirt.
  4. Peel the skin.
  5. Slice longways into large slices.
  6. Drizzle with olive oil and season with salt and pepper
  7. Toss well to distribute the seasoning.
  8. Bake for 35 to 40 minutes, tossing once or twice during cooking.
  9. When golden and crisp, remove from the oven and allow to cool slightly before serving.
