4 medium russet potatoes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

- Preheat oven to 400
- Line a baking sheet with parchment paper and set aside.
- Scrub potatoes well to remove any dirt.
- Peel the skin.
- Slice longways into large slices.
- Drizzle with olive oil and season with salt and pepper
- Toss well to distribute the seasoning.
- Bake for 35 to 40 minutes, tossing once or twice during cooking.
- When golden and crisp, remove from the oven and allow to cool slightly before serving.
