- Add ghee and jaggery powder in a mixing bowl. Mix it with a spatula really well until the mixture looks light and fluffy.
- Add vanilla essence and mix it in as well.
- Now add the dry ingredients to the mixture. Add whole wheat flour, cocoa powder, baking soda and salt. Now using the spatula mix it together until the mixture looks coarse and sandy.
- Add milk, which will act as a binding agent. Mix the milk thoroughly with the mixture, until it forms a dough like structure. You can use your hand to form a dough like structure, no need to kneed it.
- Now cover the mixture and let it cool in refrigerator for 15 mins.
- Preheat your oven at 180°c. Prepare baking sheet by lining parchment paper or silicon mat or by simply greasing the baking tray.
- Scoope out dough with a cookie scoop ( or small ice cream scoop ) and place into prepared baking sheet. Press them down as thick or thin as you want your cookies to come out. Top your cookies with some choco chips (it's optional)
- Bake it for 12-15 mins. The cookies will come out soft from the oven but will harden up as they cool. (Be careful not to over bake)
- Allow to cool for 10 mins on baking sheet, before transferring to the wire rack.
