Adadiya Pak Recipe: Traditional Gujarati Sweet With Authentic Ingredients

Adadiya pak is a traditional sweet dish from Gujarat and an important part of Gujarati culture, especially during winter. It is cherished for its delicious taste that people love but also appreciated for its health qualities. Adadiya pak sweet is believed to give heat and strength to the body, which makes it a must-have during winter. The ingredients like urad dal, ghee, jaggery and the spices used in it are all known for their warming and nourishing properties.

Associated with Gujarata’s culinary heritage, there is no festival or special occasion which is complete without this delicacy.

To make adadiya pak, you will need the following ingredients:

  1. Black urad dal flour
  2. Ghee 
  3. Jaggery
  4. Edible gum 
  5. Dry fruits: A mix of almonds, cashews, pistachios, and raisins 
  6. Mawa (Khoya)
  7. Milk
  8. Sugar

Now, for the Adadiya Pak masala ingredients

  1. Cardamom powder
  2. Cloves
  3. Dry ginger powder
  4. Nutmeg powder

  1. To make adadiya Gujarati sweet, take a large bowl. In that, combine 2 cups of urad dal flour with 1/4 cup of milk and 1/4 cup of ghee. Mix it well and rub the flour mixture with your palms for 3-4 minutes.
  2. Heat 1 cup of ghee in a heavy-bottomed kadai. Add the flour mixture and continuously stir on medium flame until it turns brown.
  3. In the same kadai, fry 1 tablespoon of edible gum in hot ghee until it puffs up and becomes crispy. Once done, crush it lightly.
  4. Chop a mix of almonds, cashews, pistachios, and raisins and add them to the flour mixture. Also, add 250 grams of mawa and sauté for a couple of minutes.
  5. In a separate saucepan, combine 1.5 cups of sugar with 1 cup of water. Boil until the syrup reaches a 1-string consistency.
  6. When the flour mixture is ready and slightly cooled, mix in the fried gond, the chopped nuts, and the spices. Combine it thoroughly.
  7. Pour the hot sugar syrup into the flour mixture and mix well until everything is evenly combined.
  8. Transfer the mixture to a greased tray, level it with a spatula, and garnish with additional chopped nuts if desired. Allow it to set for a few hours until firm.
  9. Once set, cut the Adadiya Pak into desired shapes and serve.

  2. Continuously stir the flour while roasting to avoid burning and to ensure an even brown colour.
  3. Achieving the right consistency of the sugar syrup is crucial for binding the ingredients properly. Aim for a 1-string consistency.
  4. Customise the spice mix given in this adadiya pak recipe to your preference, but the traditional mix includes cardamom, cloves, dry ginger, and nutmeg.
