INGREDIENTS

  • For Chole Palak Paneer

    • 2 tbsp ghee

    • 1 1/2 tbsp chopped onion

    • 1 tsp cumin seeds

    • 2 cloves

    • 3-4 black peppercorns

    • 1/4 dried mace

    • 2 cardamoms

    • 1 black cardamom

    • 1 bay leaf

    • 1/4 cinnamon stick

    • 1 tbsp chopped garlic

    • 1 tsp chopped giner

    • 1 dried red chilli

    • 1 cup chopped tomato

    • 1/2 cup spinach puree

    • 1 tbsp dried fenugreek leaves

    • salt to taste

    • water as required

    • pinch of turmeric powder

    • 1/2 tsp red chilli powder

    • 1/2 tsp tamarind paste

    • 1/4 cup boiled white chickpeas

    • 2 tbsp ghee

    • 20-30 gm cottage cheese

  • For Serving

    • cooked rice

  • For Garnish

    • chopped coriander leaves

    • ginger juliennes

    • green chilli

    • lemon wedge

PREPARATION

    Heat ghee in a pan and add onions, cumin seeds, cloves, black peppercorns, dried mace, cardamom, black cardamom, bay leaf, cinnamon stick and mix well.

    Now add garlic, ginger, dry red chilli and mix well. Next add tomato and spinach puree and mash well. Add dried fenugreek leaves, salt, water, turmeric powder, red chilli powder, tamarind paste and boiled white chickpeas. Mix well and cook for a few minutes.

    Heat ghee in a pan and fry the cottage cheese pieces.

    In the same pan, cook the chole palak gravy for a few minutes.

    Serve hot with rice and garnish with coriander leaves, ginger juliennes, green chilli and lemon wedge.
