  • For Golgappa

    • 1 cup semolina

    • 1 tbsp all-purpose flour

    • pinch of cooking soda

    • salt to taste

    • water as required

    • oil for frying

  • For the Filling

    • 3 small puris

    • 2 tbsp ragda

    • pinch of dry mango powder

    • pinch of chaat masala

    • sev

    • 3 tsp chopped onions

    • 1 tbsp chopped boiled potatoes

  • For Garnish

    • sev

    • farsan

    • garam masala powder

    • masala peanuts

    • mint chutney

    • tamarind chutney

    • curd

    • red chilli powder

    • chaat masala

    • chopped onions

    • chopped coriander leaves

    • sev

PREPARATION

    In a bowl, mix together semolina, all-purpose flour, cooking soda, salt and water to make a dough.

    Roll the dough and with the help of a cutter give it a shape of puri. Deep fry the big puri.

    Now take 3 small puris and stuff them with ragda, dry mango powder, chaat masala, sev, chopped onions, and chopped boiled potaotes.

    Next, take the big deep-fried puri, make a hole in the center and place the small puris inside it.

    Top this big puri with chopped boiled potatoes, sev, farsan, garam masala powder, masala peanuts, mint chutney, tamarind chutney, curd, red chilli powder, chaat masala, chopped onions, chopped coriander leaves and sev.
