Ingredients

  • For Masala

    • 2 tbsp butter

    • 1 1/2 tbsp chopped onion

    • 1 bay leaf

    • 1 cardamom

    • 7-8 curry leaves

    • 1 dried red chilli

    • 3-4 black peppercorns

    • 2 cloves

    • 1 black cardamom

    • 1/4 cinnamon stick

    • pinch of cumin seeds

    • 1 1/2 tbsp garlic paste

    • 1/2 tbsp chopped ginger

    • 1 cup tomato puree

    • 1/2 tbsp dried fenugreek leaves

    • 1 tsp turmeric powder

    • 1 tsp coriander powder

    • 1 tsp garam masala powder

    • 1 tsp chaat masala

    • 1 tsp red chilli powder

    • salt to taste

    • water as required

    • 2 tbsp caramelised onion paste

    • 2 tbsp boiled soya granules

    • 10-12 boiled soya chunks

    • 1 1/2 tbsp butter

    • 1 tbsp chopped capsicum

    • 1 tbsp chopped carrots

    • 1 tbsp chopped coriander stems

    • 2 green chillies

    • 1/2 tbsp chopped spinach

    • 1 tbsp soy sauce

    • 1/2 tbsp red chilli sauce

    • 1 tsp lemon juice

    • 1 tbsp butter

    • 2 ajwain kulcha

  • For Garnish

    • ginger juliennes

    • chopped green chilli

    • lemon wedge

PREPARATION

    Melt butter in a pan and fry chopped onions in it. Now add bay leaf, cardamom, curry leaves, dried red chilli, black peppercorns, cloves, black cardamom, cinnamon stick and cumin seeds and mix well.

    Next add garlic paste, chopped ginger, tomato puree, dried fenugreek leaves, turmeric powder, coriander powder, garam masala powder, chaat masala, red chilli powder, salt and water and mix well.

    Now add caramelised onion paste, boiled soya granules, boiled soya chunks and water and cook well.

    Melt butter in the same pan and add chopped capsicum, chopped carrots, chopped coriander stems, green chillies, and chopped spinach.

    Mix this with the soya gravy and then add soy sauce, red chilli sauce and a dash of lemon juice.

    Now put the ajwaini kulchas on the gravy for a few minutes. Melt butter in a pan and fry the kulchas in it for a few minutes.

    Serve the kulchas with soya gravy garnished with ginger, green chillies and lemon wedge.
