INGREDIENTS

  • For Mixed Spice Powder

    • 1 tsp peppercorns

    • 1 black cardamom

    • 8-9 cloves

    • 2-3 dried red chillies

    • 1-2 tbsp coriander seeds

    • 1-2 tbsp cumin seeds

    • 1-2 tbsp poppy seeds

    • 1-2 tbsp white sesame seeds

    • 1 bay leaf

    • 2 tbsp desiccated coconut

  • For Tofu and Ash Gourd Curry

    • 1 tbsp ghee

    • 1 tbsp chopped ginger

    • 1 tsp mixed spice powder

    • 1 tsp turmeric powder

    • 2 cups chopped ash gourd

    • rock salt to taste

    • water as required

    • 300 gms tofu

    • 1 cup coconut milk

    • freshly chopped coriander

PREPARATION

    In a pan, 1 tsp lightly roast peppercorns, 1 black cardamom, 8-9 cloves,2-3 dried red chillies, 1-2 tbsp coriander seeds, 1-2 tbsp cumin seeds, 1-2 tbsp poppy seeds, 1-2 tbsp white sesame seeds, 1 bay leaf and 2 tbsp desiccated coconut.

    Crush the roasted masala in a pestle to make a fine powder.

    In a pan, heat 1 tbsp ghee, add 1 tbsp chopped ginger, 1 tsp mixed spice powder, 1 tsp turmeric powder, 2 cups of chopped ash gourd and rock salt to taste and mix it well.

    Add some water, cover the pan and let it cook until the ash gourd turns soft.

    Add tofu, 1 cup coconut milk and give it a gentle simmer.

    Garnish it with freshly Chopped Coriander and serve it with Coconut Rice.
