INGREDIENTS

  • For Dhansak

    • 500 gm mutton (curry cut)

    • 1/2 cup masoor dal

    • 1/2 cup tur dal

    • 1/2 cup yellow moong dal

    • brinjals, small

    • yellow pumpkin

    • spring onions

    • sprouted fenugreek

    • 1 cup tomatoes

    • 1 cup onion

    • 2 tbsp ginger garlic paste

    • finely chopped green chillies

    • 2 tbsp dhansak masala powder

    • 1/2 tsp turmeric powder

    • salt to taste

    • oil

    • 1 tsp Kairi sambar powder

  • For Dhansak Masala

    • 1 tbsp asafoetida

    • 1 kg coriander seeds

    • 200 gm cumin seeds

    • 100 gm black pepper

    • 100 gm fenugreek seeds

    • 100 gm mustard seeds

    • 300 gm red chillies

    • 50 gm bay leaves

    • 20 gm star anise

    • 20 gm cloves

    • 20 gm cinnamon stick

    • 20 gm green cardamoms

PREPARATION

    Wash equal quantities of all dals, about a cup each and soak. Add chopped pumpkin, brinjals, spring onions, methi sprouts, turmeric powder, salt and pressure cook with enough water. Once cooked, mash and leave to cool.

    In a kadai heat oil, add the bay leaf, curry leaves and onions.

    Next, add ginger garlic paste and add mutton and saute.

    Now add dhansak masala, salt and keri sambar masala (Parsi sambar masala).

    Now add chopped tomatoes and water. Let the mutton cook till it becomes tender.

    Mix dal and mutton and mix well.
  7. 7

    Finish with fresh coriander leaves.
