INGREDIENTS

  • For Kalan

    • 1 cup chopped cabbage

    • 1/2 cup chopped mushrooms

    • 1/2 cup chopped onions

    • 1 tsp chopped green chillies

    • 1 cup all-purpose flour

    • 1/4 cup corn flour

    • pinch of red chilli powder

    • pinch of garam masala powder

    • water as required

    • oil for frying

  • For Sauce

    • 3 tbsp oil

    • 1 cup chopped onions

    • 6-7 curry leaves

    • 1 tbsp ginger garlic paste

    • salt to taste

    • pinch of red chilli powder

    • 1/2 tsp garam masala powder

    • 1 cup tomato puree

    • 1 tsp turmeric powder

    • water as required

    • 1 tsp corn flour

    • 1/2 tsp garam masala powder

  • For Garnish

    • chopped onions

    • curry leaves

    • red chilli sauce

    • green chilli sauce

PREPARATION

    In a bowl, mix together chopped cabbage, chopped mushrooms, chopped onions, chopped green chillies, all-purpose flour, corn flour, red chilli powder, garam masala powder and water.

    Make smalls balls of this mixture and deep-fry them in oil till they turn golden brown.

    In a pan, heat oil and add chopped onions, curry leaves, ginger garlic paste, salt, red chilli powder, garam masala powder, tomato puree, turmeric powder and mix well.

    Mix water with corn flour to make a slurry. Pour this slurry in the sauce and mix well.

    Add water to the mixture and cook. Now add the deep-fried mushroom fritters to it, garama masala and stir fry.

    Transfer the Mushroom kalan to a bowl and garnish with chopped onions, curry leaves, red chilli sauce and green chilli sauce.
