INGREDIENTS

    • 1 medium head napa cabbage

    • 1/4 cup salt

    • 1 tbsp grated garlic

    • 1 tsp grated peeled fresh ginger

    • 1 tsp granulated sugar

    • 2 tbsp fish sauce

    • 1 - 5 tbsp red pepper flakes

    • 250 gm radish, peeled and cut into matchsticks

    • 4 scallions, trimmed and cut into 1-inch pieces

PREPARATION

    Cut the napa cabbage into bite site pieces and salt it. Set it aside for some time.

    Rinse the cabbage with cold water. Squeeze the excess water and transfer the cabbage to a bowl.

    Add radish, carrots, spring onions, crushed garlic, ginger, sugar, fish sauce, chilli flakes and mix well.

    Transfer the kimchi to a jar and refrigerate for 5 days.
