Handvo is a delicious savoury cake made from rice, lentils and vegetables. Chef Pankaj Bhadouria gives it a twist with moong and spinach.

Ingredients

    • 2 cups moong beans sprouts

    • 1/2 cup chopped spinach

    • 2 - 3 green chillies

    • water as required

    • 1/4 cup semonlina

    • 1/4 cup curd

    • salt to taste

    • 1/2 cup grated carrot

    • 1/2 cup chopped green capsicum

    • 1/4 cup boiled peas

    • 1/4 cup frozen corn

    • 2 tbsp gram flour

    • 1/4 cup coriander leaves

    • 1 chopped onion

    • 1 tsp baking soda

    • 1 tbsp oil

    • 1 tsp mustard seeds

    • 1 tbsp white sesame seeds

    • 11 - 12 curry leaves

PREPARATION

    In a grinder jar add sprouted moong, spinach, green chillies along with water and grind it into a coarse paste.

    In a bowl add semolina and curd. Mix it well and allow it to rest for 15-20 minutes.

    In another bowl add ground moong paste along with salt, carrot, green capsicum, boiled green peas, corn, gram flour, curd and semolina mixture, coriander leaves, onion, water and mix it well. Now add baking soda, mix well and keep aside for 3-4 minutes.

    Heat oil in a pan. Add mustard seeds, curry leaves, asafoetida, white sesame seeds and allow them to splutter.

    Now pour the moong dal mixture and spread it evenly. Cover the pan with lid and cook on low flame for 20-25 minutes.

    Flip it and cook on the other side for 5-10 minutes until it's golden brown.

    Once the handvo is cooked, remove from the pan and allow it to rest for 5-6 minutes. Cut it into your desired shape and serve along with green chutney and lemon wedges.
