INGREDIENTS

  • For Granola Muffins

    • 1 cup oats

    • 1/4 cup cashew nuts

    • 1/4 cup almonds

    • 1/4 cup pistachios

    • 1/4 cup black currants

    • 1/4 cup dates

    • 1/4 cup raisins

    • 1/4 cup honey

    • 1/4 cup desiccated coconut

    • 2 cups all-purpose flour

    • 2 tsp baking powder

    • 1 tsp cinnamon powder

    • 2 eggs

    • 1/4 cup curd

    • 1/3 cup honey

    • 2/3 cup brown sugar

    • 1/2 cup vegetable oil

    • 1 tsp vanilla extract

    • 2 diced apples

    • icing sugar for dusting

PREPARATION

    In a bowl mix, oats, cashew nuts, almonds, pistachios, black currants, dates, raisins, honey, desiccated coconut.

    Spread the granola mixture on a baking tray lined with parchment paper.

    Bake the mixture in a preheated oven at 180 Celsius for 15-20 mins.

    In a bowl mix all-purpose flour, baking powder, cinnamon powder, eggs, curd, honey, brown sugar, vegetable oil and vanilla extract.

    Add the diced apples and mix well.

    Fill the muffin moulds with the flour mixture and baked granola.

    Bake the mixture in a preheated oven at 180 Celsius for 15-20 mins.

    Garnish the muffins with icing sugar.
