INGREDIENTS

  • For Masala

    • 2-3 tbsp oil

    • 1/2 cup sliced onion

    • 1 tbsp chopped garlic

    • 1 tbsp chopped ginger

    • 1 tsp chopped green chilli

    • 1 tbsp diced red bell pepper

    • 1 tbsp diced capsicum

    • 1 tbsp diced yellow bell pepper

  • For Batter

    • 1 tbsp all-purpose flour

    • 2 tbsp corn flour

    • water as required

    • salt to taste

    • 1/2 tsp Schezwan chutney

  • For Frying

    • 3 boiled eggs

    • oil for frying

  • For Egg Chilli Fry

    • 1 tbsp Schezwan sauce

    • 1 tsp soy sauce

    • 1 tsp white vinegar

    • 1 tbsp green chilli sauce

    • 1 tbsp red chilli sauce

    • 1 tbsp corn flour

    • water as required

    • 1 tbsp tomato ketchup

    • 1 tsp vegetable stock powder

    • salt to taste

  • For Garnish

    • spring onions

PREPARATION

    To make masala, heat oil in a pan and add onions, garlic, ginger, green chilli and toss. Now add, red bell pepper, capsicum, yellow bell pepper and toss again.

    Make a thick batter by mixing together all-purpose flour, corn flour and water in a bowl. Add salt and Schezwan chutney to it and mix well.

    Dice the boiled eggs, coat with the batter and deep-fry in a pan till golden brown and crispy.

    Toss the deep-fried eggs with the masala and mix well.

    Add Schezwan sauce, soy sauce, white vinegar, green chilli sauce, red chilli sauce and mix well.

    In a bowl, make a slurry with corn flour and water. Add this slurry to the egg chilli mixture.

    Now add tomato ketchup, vegetable stock, salt and mix well.

    Garnish with spring onion and serve hot.
