INGREDIENTS

  • For Chicken Shawarma

    • 1 tsp garlic paste

    • ½ tsp garlic powder

    • 1 tsp cinnamon powder

    • 1 tsp cumin powder

    • ½ tsp clove powder

    • 1 tsp black pepper powder

    • 1 tsp tahini

    • juice of 2 lemons

    • salt to taste

    • 4 boneless, chicken thighs

    • 1 large onion, thinly sliced

    • 1 cup cabbage

    • 1 tomato, julienned

    • ⅓ cup oil

    • toum paste (garlic mayonnaise)

  • For serving

    • pickled carrots

    • pickled beetroot

    • pickled onions

    • pickled radish

    • khaboos/ pita bread

    • potato fries

  • For pita bread

    • 1 ½ cups warm water (110° to 115°)

    • 1 packet active yeast

    • 2 tbsp sugar

    • 3 cups all-purpose flour

    • ¾ cup whole wheat flour

    • 2 tsp sea salt

    • 3 tbsp olive oil

PREPARATION

    In a small bowl, place the chicken thighs and add salt, lemon juice, cinnamon powder, garlic paste, tahini, garlic powder, pepper powder, clove powder & hung curd. Toss everything together and set aside. Cover and refrigerate for 3 hours or overnight.

    Grill on a cast iron grill pan skin side down first, let it cook for 3-4 mins on high heat then flip and cook till golden brown. Reduce flame to slow heat and cook till done.

    For the salad, in a bowl take cabbage, onions and tomato juliennes, lemon juice, cumin powder, salt and mix well.

    To serve, open pita pockets up. Spread a little toum paste (garlic mayonnaise), salad, pickled vegetables, potato fries and sliced chicken. Roll tight. Serve immediately!
