Ingredients

  • For Bhog Ki Khichdi

    • 1 cup gobhindobhog rice

    • 1 cup yellow lentils

    • 2-3 tbsp mustard oil

    • 1-2 big diced potatoes

    • salt to taste

    • 1 medium cauliflower

    • 2 bay leaves

    • 2 black cardamoms

    • 1 cinnamon stick

    • 2 dries red chillies

    • 3-4 cloves

    • 1 tsp turmeric powder

    • 1 tsp chilli powder

    • 1 tsp Bengali garam masala

    • water as required

    • 1 tsp cumin powder

    • 1 tbsp ginger paste

    • 1 cup chopped tomatoes

    • 1 cup green peas

    • salt to taste

    • a pinch of sugar

    • 10-12 raisins

    • 8-10 cashew nuts

  • For Chorchori

    • 2-3 tbsp mustard oil

    • 1 tsp panchphoran

    • 1 cup mangodi

    • ½ cup cauliflower stem

    • ½ cup cauliflower florets

    • 1 potato

    • 1 brinjal

    • 1 drumstick

    • ½ radish

    • 3-4 green chillies

    • 1 tsp turmeric powder

    • salt to taste

    • 1 tsp sugar

    • water as required

PREPARATION

    Wash the 1 cup gobhindobhog rice and keep it aside.

    Dry roast 1 cup yellow lentils till it gets a nice colour and nutty flavor.

    Heat 2-3 tsp mustard oil in a pan. Add 1-2 diced potatoes, salt and saute. Transfer the potatoes to another plate.

    Add cauliflower florets to the same pan. Toss them and set them aside.
  5. 5

    In the leftover oil, add 2 bay leaves, 2 black cardamom, 1 cinnamon stick, 2 dried red chillies, 3-4 cloves, 1 tsp turmeric powder, 1 tsp chilli powder, 1 tsp Bengali garam masala and saute.

    Add water, 1 tsp cumin powder, 1 tbsp ginger paste, 1 cup chopped tomatoes and cook it well.

    Add roasted dal and rice, fried vegetables, 1 cup green peas, water, salt, a pinch of sugar, 10-12 raisins, 8-10 cashew nuts and mix it well and cook.

    In a pan heat 2-3 tbsp mustard oil and add 1 tsp panchphoran, 1 cup mangodi and saute until golden brown.

    Add ½ cup cauliflower stem, ½ cup cauliflower florets, 1 potato, 1 brinjal, 1 drumstick, ½ radish, 2-3 green chillies, 1 tsp turmeric powder, salt to taste, 1 tsp sugar, water as required and mix and let it cook.

    Serve the Bhog Ki Khichdi with chorchori and tomato khajur chutney.
