Hello foodie friends Today I am going to share lost recipe from Gujarat. Usually in winter season this recipe made in kathiyawad region.

INGREDIENTS

  • 1 medium size fine chopped eggplant
  • 1 medium size fine chopped onion
  • 1 small size fine chopped tomato
  • 1 tbsp garlic paste
  • 1 tsp ginger and chilli paste
  • Handful spring onion leaves (chopped)
  • Oil 3 tbsp
  • 1 tsp red chilli powder
  • 1/4 tsp asafoetida
  • 1/4 tsp turmaric powder
  • 2 tsp coriander powder
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 8 to 10 curry leaves
  • 2 tbsp peanut powder
  • 3 tbsp curd
  • 2 tsp garam masala
  • 1 tsp kashmiri red chilli
  • Salt to taste
  • 1 Cinnamon stick
  • 1 bay leaf
  • 1/2 tsp carom seeds
  • 1 star asient
  • Salt to taste
  • Water as required
  • chopped coriander leaves for garnishing

PREPARATION

    Take wok and heat oil.

    Add mustard seeds and cumin seeds turn by turn and let them creckel .

    Now add asafoetida and curry leaves.

    Add whole spice and ginger, garlic and chilli paste.

    After add onion and saute it.

    Now add tomato, spring onion leaves and eggplant.

    Add salt and other spices in curd and whisk it properly.

    Add peanut powder and curd.

    Let it cook for 10 minutes after adding required water.

    Sabji is ready, Bajara Rotalo is good combination with this sabji.

    Garnish with coriander leaves.
