Traditional Aam ka Khatta Meetha Achar - Noncha By Ruchi Dhawan

Aam Ka Khatta Meetha Achar, a sweet - sour mango pickle is a delicious and simple pickle to prepare. It is North Indian Khatri recipe called Noncha in Khatri families. It is very different form of Mango Pickle, which has the tangy flavour of traditional Mango Pickle with a bit of sweetness

INGREDIENTS

  • Raw Mango / Kachha Aam - 2 kg
  • Salt - 200 gm
  • Sugar - 400 gm
  • Turmeric Powder - 2 tsp
  • Fennel Seed / Sanuf - 50 gm
  • Fenugreek Seeds / Methidana - 1 tsp
  • Mustard Seeds / Sarson ke daane- 2 tsp
  • Red Chilli Powder - 4 tsp
  • Mustard Oil - 2 tbsp
  • 1Hing (Asafoetid- 1/2 tsp

PREPARATION

    Step-1 Wash and dry the mangoes nicely.

    Step-2 Cut the mangoes to pieces of desired size and transfer in ceramic or glass container.

    Step-3 Now add salt and hing and mix nicely.
  4. 4

    Step-4 Keep it in sun covered with a clean and dry muslin cloth for a day.

    Step-5 Next day take out the pieces of mango from the salt water.
  6. 6

    Step-6 Keep these pieces of mango in sun for 2-3 days to dry. (Cover with a clean and dry muslin cloth).

    Step-7 Dry roast Fennel Seed, Fenugreek Seed, Mustard Seed for a minute.

    Step-8 Grind Fennel Seed, Fenugreek Seed and Mustard Seed.

    Step-9 In the salt water add the ground powder, turmeric powder, chilli powder.

    Step-10 Add sugar to this mixture.

    Step-11 Keep this Water also in sun for 2-3 days, covered with a clean and dry muslin cloth.

    Step-12 After 2-3 days, add the mango pieces to the processed water.

    Step-13 Add Oil to this and fill it in a Bottle or Jar .

    Step-14 Cover the bottle with muslin cloth and Keep it in Sun for 2-3 days.
  15. 15

    Step-15 The pickle is ready to be enjoyed with stuffed Parathas, Mathri, Dal Chawal etc.
