Tomato soup is a classic soup and its perfect recipe for monsoon and winter season though you can enjoy this soup anytime of the year.

Ingredients

  • For Soup

    • 750 gms ripe red tomatoes

    • 1 onion diced

    • 1/2 carrot diced

    • 1-2 tbsp fresh thyme

    • 8-10 garlic cloves

    • 4 tbsp olive oil

    • salt to taste

    • 1/2 tsp pepper powder

    • 10-12 basil leaves

    • veg stock as required

    • 2 tbsp butter

    • 2 tsp sugar (optional) if soup is too sour

  • For Dill herb bread

    • 1 small Baguette

    • 3 tbsp butter

    • 2 tbsp chopped dill leaves

    • 1/2 tsp chilli flakes

    • salt to taste

  • For garnish

    • fresh cream

    • basil leaves

PREPARATION

    For cream of tomato soup, we will first take the main ingredient of this dish which is tomato and cut it in half.

    After roughly cutting the tomatoes, take a baking tray and put all the tomatoes in it.

    Just like roughly cutting the tomato, similarly, cut the carrot, onion, and garlic too. After cutting, put them all in the same baking tray and sprinkle thyme on top.

    Add olive oil on top of all the vegetables and herbs

    Sprinkle salt and pepper. Give it a quick stir to vegetables, spices and herbs

    Now bake it in a preheated oven @ 180 degree Celsius for 30-40 minutes. After proper roasting, add basil leaves and mix it well.

    Blend the roasted vegetable

    Strain the mixture.

    Return the soup back to the fire and adjust consistency using stock. let it cook for 20-25 minutes.

    Check for the seasoning, if needed add salt, pepper, sugar and mix well.

    For Dill Herb Bread, we will first cut the bread into proper slices.

    Now we will spread butter on these slices, then add dill leaves and salt. Finally sprinkle chilli flakes. Either bake in oven @ 180 for 6 -7 minutes or cook on a griddle pan.

    We'll garnish it with fresh cream, basil leaves along with herb bread
