Super Healthy Banana Bread By Shruti Gupta

It is gluten free.

INGREDIENTS

  • Multigrain flour- 1 cup (150gms)
  • Ragi flour- 1/2 cup (50gms)
  • Rice bran oil- 1/4 cup
  • Flaxseed- 1 tsp
  • Cinnamon- 1 tsp
  • Jaggery- 2 tsp
  • Banana- 4 small
  • Baking soda- 1tsp
  • Coconut milk- 200ml
  • Almonds, walnuts- handful
  • vanilla extract- 1/2 tsp

PREPARATION

    In a mixing bowl - mash the ripe bananas with a fork until completely smooth.

    Add jaggery, cinnamon, almonds, walnuts and baking soda.
  3. 3

    In a separate bowl mix multigrain flour and raagi flour along with baking soda and vanilla extract.

    Add the flour to the banana mixture.
  5. 5

    Slowly add coconut milk and rice bran oil. Mix them well with an egg beater.

    Pour the batter into a baking plan.

    Bake for 40 mins at 240 degree Fahrenheit.

    Check with the toothpick or fork to ensure it is done.

    Remove from oven. Let it cool for few minutes.

    Serve with hot tea or coffee.
