Phirni is a scrumptious traditional North Indian Sweet made for festivals and special occasions. This is a low fat (no ghee, butter or oil) and low sugar recipe and perfect for the health-conscious gym goers who love their cheat treats.

INGREDIENTS

  • 1.) 4 Tbsp Basmati Rice
  • 2.) Water for soaking
  • 3.) 1.5 litre Milk (Soy Milk)
  • 4.) Half Cup of Brown sugar
  • 4.) 1/4 tsp Cardamom powder
  • 5.) 4 tsp Saffron milk
  • 6.) Few dry fruits, chopped
  • 7.) Few drops Gulab ark

PREPARATION

    Firstly, soak 4 tbsp. of basmati rice for 30 minutes.

    Discard the water and blend rice to coarse paste. Keep aside.

    Now in a large kadai boil 1.5 litre soy milk.
  4. 4

    Stir occasionally, and simmer for 10 minutes.

    Keep the flame on low or till milk thickens.

    Now add in prepared coarse rice paste.
  7. 7

    Stir continuously for 5 minutes. Else, lumps might form.

    Simmer for another 5 minutes stirring in between. Boil the milk till the rice gets cooked completely.

    Further add half cup of brown sugar and 4 tbsp. saffron milk. Mix well till the milk thickens and turn creamy.

    Add in cardamom powder, rose ark and mix well. Finally, serve chilled phirni garnished with few chopped nuts and kesar strands.
