Pumpkin and Potato Bhaaji By Lily Monteiro

Pumpkin and Potato Bhaaji is a tasty and simple to make recipe with easily available ingredients. It is a recipe even beginner's can try and relish.

Serves3 - 4 servings

INGREDIENTS

  • Red pumpkin 250gms diced in small cubes
  • Potato 250gms diced in small cubes
  • Green Chilli 3-4 chopped
  • 1 Onion medium sized chopped
  • 1½ tsp chopped ginger
  • 1½ tsp chopped garlic
  • 2 tbsp chopped coriander
  • 4-5 tbsp Oil
  • ½tsp Mustard
  • 1½tsp Jeera (Cumin)
  • 1Curry leaves 8-10
  • 1½tsp turmeric powder
  • 1Salt as per taste

PREPARATION

    Step 1- Add diced red pumpkin, potatoes, chopped onion, chopped garlic, chopped ginger, 1tbsp of coriander, chopped green chillies, turmeric, salt(as needein bowl and mix well.

    Step 2- In a pan add oil and heat .

    Step 3- Add mustard, cumin and curry leaves to the oil and let it splutter.

    Step 4- Add the pumpkin and Potato mixture to the pan and cook on high flame for 1-2 minutes without lid.

    Step 5- After 1-2 minutes, low the flame, put the lid and cook for 5-10 minutes stirring at frequent intervals.

    Step 6- Turn off the flame and remove it in a bowl.

    Step 7- Garnish with chopped coriander and serve hot.
