Passion Fruit Souffle By Ann Mary George

A melt in mouth, yet flavourful dessert made with just 3 ingredients

INGREDIENTS

  • Passion Fruit - 3 nos
  • Eggs - 2nos
  • Castor Sugar - 4 tbsp plus little extra for dusting

PREPARATION

    Grease the ramekins for baking with butter.
  2. 2

    Dust the ramekins with castor sugar. Dip the edges in castor sugar and keep it aside.

    Separate egg whites and egg yolk .
  4. 4

    Beat 2 egg whites in a bowl until you get stiff peaks .
  5. 5

    Take pulp from passion fruit.
  6. 6

    Strain the pulp and extract pure passion fruit juice.
  7. 7

    Add 1 egg yolk to passion fruit juice.
  8. 8

    Add 4 tbsp castor sugar.
  9. 9

    Beat well until creamy.
  10. 10

    Add egg whites in 2 batches and gently fold together.
  11. 11

    Fill the mix in ramekins till the edges.
  12. 12

    Bake in a preheated oven at 220 degrees for 8 minutes.

    Dust with castor sugar and serve hot.
