BAKED BUN VADA PAV By Dr. Supriya Malshe

It looks like a Bun,,, but inside its Fun... Mumbai's special Batata-Vada hidden inside a Bun. Its a low fat, healthier version of regular fried Vada-Pav.

Serves8 Buns

Cooking Time2.5 hours

INGREDIENTS

  • For Bun - Whole wheat flour - 1.5 cups
  • Milk - 0.5 cup
  • Dry Yeast - 0.5 tsp
  • Sugar - 1 tsp
  • Salt - 0.5 tsp
  • Refined Oil - 1 tbsp
  • For Filling - Potato - 250 gm
  • Refined Oil - 1 tbsp
  • For Tadaka - 0.5 tsp Rai, Pinch of asafoetida & turmeric powder, 4-5 curry leaves, 0.25 tsp Urad dal, 0.5 tsp each of coarsely ground coriander & cumen seeds
  • Finely chopped Green chiily, ginger, garlic - 1 tsp each
  • Salt to taste
  • Finely chopped Coriander leaves 1 tbsp
  • Coarsely ground roasted peanuts - 2 tbsp

PREPARATION

    Add dry yeast and sugar to 1/4th cup of warm milk and keep covered for 15 minutes to activate the yeast. Milk should not be very hot.

    After 15 minutes, add salt to whole wheat flour, mix and add activated yeast with the milk. Add remaining milk slowly to get a soft, sticky dough.

    Keep kneading the dough for 2 minutes. Take oil on the palm and keep kneading for another 5 minutes till the dough comes togethr nicely.

    Start stretching the dough slowly for about 5 minutes till you get soft, stretcheble dough.

    Keep the dough in a glass bowl covered with a cling wrap for 90 minutes, till it gets doubled in size.

    For making filling, boil and mash the potatoes.

    Heat the oil in a pan and add all the ingredients of the Tadaka one by one and fry for a minute. Then add chopped chilly, ginger, garlic and fry for 1 minute. Then add chopped coriender and put off the flame.

    Add mashed potatoes and salt to taste and mix well. You can add more chillies as per your taste. Divide the mixture in 8 equal parts.

    After 90 minutes punch the Bun dough and knead for a minute. Divide into 8 equal parts.

    Make each part of dough into a ball. Roll one part of potato mixture into coarsely ground peanuts and fill in the dough ball and cover from all sides to make a bun. (like stuffing a paratha).

    Make sure there are no cracks and dough covers the mixture uniformly from all sides.

    Keep buns on a baking tray keeping at least 2" space between them and keep covered in a warm place for 45 minutes .

    Pre-heat the oven at 200 degree for 15 minutes.

    Brush the buns with milk and bake in preheated oven at 200 degree C for 30 minutes, till they become golden brown.

    After removing from oven, rub some butter or oil on the buns and keep them on a wire rack covere with a damp muslin cloth till cools completely.

    Before eating reheat in a microwave and serve hot with Tamarind / Pudina / Garlic chutney or Totamo Sauce.

    Onion-totamo salsa and any fruit juice can be offered as accompaniments, for more a complete healthy breakfast.
