Yogurt honey tartlet with a pomegranate compote By Ankana bhattacharyya

This is one those baking initial experiments I had success with . Due to certain health reasons I had to cut down on my sugar intake . Being an ardent lover of desserts I was disheartened . This paved the way for my healthy baking journey . And this recipe till date remains a family favourite .

Serves6 Servings

Cooking Time50 mins plus the time needed for the tartlets and compote to cool down

INGREDIENTS

  • 50 grams oats
  • 30 grams almonds
  • 20 grams whole wheat flour
  • 2 tbsp honey
  • 25 grams oil
  • 150 grams yoghurt
  • 65 grams honey
  • 1 tsp vanilla
  • 2 eggs
  • 11 tbsp lemon juice
  • 11-2 tbsp milk if needed
  • 13/4 rth cup pomegranate pearls
  • 11/4rth cup cranberries
  • 11 tbsp lemon juice
  • 13 tbsp honey

PREPARATION

    Grind the oats, almonds amd WW flour together .

    Add in the 2 tbsp honey and oil to the dry mix and combine till everything comes together .

    Pour 2 tbsp of the mixture in the desired mould.

    Let this chill in the refrigerator for 30 mins .
  5. 5

    In the meantime prepare the filling .
  6. 6

    Beat the eggs , honey and vanilla .
  7. 7

    Then add in the yogurt .
  8. 8

    Time for the lemon juice and milk .
  9. 9

    Combine well till the mixture turns smooth .

    1Add the filling in the moulds over the base layer .

    1Bake in a preheated oven at 170 C for around 17 mins .

    1For the compote cook the pomegranate, cranberries, honey and lemon juice over medium low flame till the mixture reaches a thick consistency.

    1Top the baked and cooked tartlets with the compote and enjoy the guilt free and delicious dessert.
