INGREDIENTS

  • For Suhal

    • 2 cups all-purpose flour

    • 1/2 tsp carom seeds

    • salt to taste

    • 1 tbsp ghee

    • 1 cup water

  • For Suahl Ki Chaat

    • 3-4 tbsp oil

    • pinch of asafoetida

    • 3 cups soaked and boiled white peas

    • salt to taste

    • 1 tbsp chaat masala

    • 1 tsp cumin powder

    • 2-3 chopped green chillies

    • oil for frying

  • For Yogurt

    • 2 cups Yogurt

    • salt to taste

    • 1 tsp red chilli powder

    • 1 tbsp chaat masala

    • 1 tsp cumin powder

  • For Assembling

    • 2 crushed suhal

    • cooked white peas

    • 2 tbsp chopped onions

    • 1 tbsp chopped tomatoes

    • 2 chopped green chillies

    • 1 tsp chaat masala

    • 2-3 tbsp yogurt

    • 1-2 tbsp tomato chutney

    • 1 tsp cumin powder

    • 3 tbsp sev

    • 1 tsp chaat masala

    • 1 tsp red chilli flakes

    • 1 crushed papad

PREPARATION

    For making suhal, mix together all-purpose flour, carom seeds, salt and ghee and knead a stiff dough by adding the required quantity of water.

    Cover the dough with a wet muslin cloth and keep aside.

    Heat oil in a pan and add asafoetida, soaked and boiled white peas, salt, chaat masala, cumin powder, and chopped green chillies and mix well.

    Remove the peas in a bowl.

    Divide the dough into equal portions and shape into balls.

    Roll the dough balls round like puris.
  7. 7

    Apply some water on one side of suhal and fold it into a triangle.

    Make suhals in similar manner and deep fry them.

    Meanwhile, whisk together curd, salt, red chilli powder, chaat masala and cumin powder in a bowl.

    For assembling, crush suhals in serving bowls and top them with cooked white peas, chopped onions, chopped tomatoes, chopped green chillies, chaat masala, yogurt, tomato chutney, and sev and sprinkle cumin powder, chaat masala and red chilli flakes and add a crushed papad on it and serve.
