Ingredients

  • For Shukto

    • 1 cup soaked poppy seeds

    • 2-3 tbsp mustard seeds

    • 1 cup mustard oil

    • 1 cup diced eggplant

    • 1 tsp turmeric powder

    • salt to taste

    • 1 cup bitter gourd

    • 1 cup bori

    • 1 raw banana

    • 1 potato

    • 1 sweet potato

    • 1 drum stick

    • 1 radish

    • 1 sheem

    • 1 tsp mustard seeds

    • 1 tsp fennel seeds

    • 1 tsp cumin seeds

    • 1 tsp fenugreek seeds

    • 1 tsp Nigella seeds

    • 2 tbsp ginger paste

    • water as required

    • 1/2 tsp turmeric powder

    • salt to taste

    • 2 cups milk

    • 1 tsp sugar

PREPARATION

    Grind together the soaked poppy seeds and mustard seeds in a mixer.

    Heat mustard oil in a kadhai.
  3. 3

    Add turmeric powder and salt to the diced eggplant and fry them in the mustard oil. Remove on a plate.

    Similarly, fry bitter gourd, bori, raw banana, potato, sweet potato, drum stick, radish and sheem and remove on a plate.

    In the same kadhai, add mustard seeds, fennel seeds, cumin seeds, fenugreek seeds, Nigella seeds, and ginger paste.

    Add water to the poppy seeds and mustard seeds paste and pour it in the kadhai.

    Add turmeric powder, salt, fried vegetables, milk, and sugar to the kadhai, mix well and cook on a high flame for some time.

    Shukto is ready to serve.
