INGREDIENTS

  • For Puttu

    • salt to taste

    • 1 cup rice flour

    • hot water as required

    • 1/2 cup freshly grated coconut

    • water as required

  • For Kadala Curry

    • 1-2 tbsp coconut oil

    • 1 tbsp chopped garlic

    • 1 tbsp chopped ginger

    • 3-4 green chillies

    • 1/4 cup chopped fresh coconut

    • 1/2 chopped onions

    • 1/4 cup chopped tomatoes

    • 1 tsp turmeric powder

    • 1/2 tbsp red chilli powder

    • salt to taste

    • 2 cups boiled black chickpeas

    • water as required

    • 1-2 tbsp coconut oil

    • 1/2 cinnamon stick

    • 4-5 cloves

    • 4-5 green cardamoms

    • 1 tsp fennel seeds

    • 1/2 cup chopped onions

    • 1/2 cup grated coconut

    • 1 tsp turmeric powder

    • 1 tsp red chilli powder

    • 1 tsp coriander powder

    • water as required

    • 1 tbsp coconut oil

    • 1 tsp mustard seeds

    • 2 dried red chillies

    • 7-8 curry leaves

PREPARATION

    Take 1 cup rice flour in a bowl, add salt and sprinkle some hot water. Mix well till the mixture gets a crumbly texture.

    In a puttu maker add grated coconut at the bottom, then add the rice flour mixture and finish it off with some more grated coconut. Lightly press the puttu maker and steam until done.

    Heat coconut oil in a pan, add chopped ginger, chopped garlic, chopped green chillies, cubes of fresh coconut, chopped onion & sauté till translucent.

    Add tomatoes and cook till mushy. Add turmeric powder, red chilli powder, salt and saute.

    Add the boiled black chickpeas, water and saute. Cover the pan and cook.

    Heat coconut oil in another pan and add cinnamon stick, cloves, green cardamom, fennel seeds and saute.

    Add grated coconut, chopped onions and cook till this mixture turns golden. Add turmeric powder, red chilli powder, coriander powder and sauté.

    Once the mixture cools, blend it into a smooth paste and add it to the curry.

    Heat coconut oil in a tadka pan and add 1 tsp mustard seeds, 2-3 whole red chillies & a sprig of curry leaves. Pour it on the curry.

    Serve the kadala curry with puttu.
